Ok everyone...these cheese bites come highly recommended from the gals at Glittering Grace so hopefully you'll give them a try! I surely will.
They are a savory treat; more tempting than other cheese crackers - especially those that are store bought. Evidently they can't be beat!
Annnnnd now my mouth is watering...
Ingredients:
2 C. (8 oz) grated sharp cheddar cheese
8 T. (1 stick) unsalted butter, softened
1 1/2 C. all purpose flour
2 t. dried rosemary
1 t. sea salt (plus more for sprinkling on top)
1 t. crushed red pepper flakes
1/4 t. ground cayenne pepper
Preparation:
Use electric mixer to cream butter and cheese together until smooth and well combined.
In separate bowl, combine all dry ingredients
Add flour mixture to cheese mixture and combine thoroughly
Turn dough out onto wax paper and roll into a log shape for round crackers or shape into a long rectangle to cut into square shaped crackers.
Wrap dough in paper and refrigerate until chilled. When dough is firm and sliceable, then you can take it out.
Slice crackers into 1/4 inch bites and arrange on a baking sheet
Use a fork to prick center of each cracker and sprinkle with salt.
Bake at 375 for 12-15 minutes
